Description

My family loved sausage balls but becoming gluten free seemed to put these finger foods out of reach. But as I began modifying my “fav” recipes, I hit on a winner with my family. The sausage balls were a hit but when I figured out I could also use the mixture as meatloaf, we were in to win.

Ingredients

  • 1-½ pound Ground Beef
  • 1 pound Ground Pork
  • 1-½ cup Shredded Cheddar Or Combo Jack Cheese
  • ⅓ cups Bob's Red Mill Pancake Mix
  • ⅓ cups Oat Flour
  • ⅓ cups Chunky Salsa
  • 1 teaspoon Trader Joe's 21 Spice Seasoning Or Mrs. Dash
  • 2 Tablespoons Taco Sauce
  • ¼ cups Dill Pickle Juice (I Use Trader Joe's Pickles)
  • ½ jars Diced Pimentos 4 Ounce Jar (optional)

Preparation

Preheat oven to 350 F.

Blend the ground meats together in a large mixing bowl. Then add all of the remaining ingredients and mix together thoroughly (you may need to use your hands).

If you are making the sausage balls, roll the mixture into 1-inch sized balls and place on “rimmed” cookie sheets. Then bake at 350 F for about 20-25 minutes or until brown. For the meatloaf, press the mixture into a 9 x 11 baking dish. Put it into the preheated oven and bake about 1 hour or until done.
