Description

These cookies are amazing. They don’t taste like gluten free cookies, even the dough is delicious!

Ingredients

  • 8 ounces, weight Butter, Softened
  • 2 ounces, weight Sugar
  • 8 ounces, weight Brown Sugar
  • 11 ounces, weight Brown Rice Flour
  • 1-¾ ounce, weight Cornstarch
  • 1-½ teaspoon Guar Or Xanthan Gum
  • 1-½ teaspoon Baking Soda
  • 1 Tablespoon Cocoa Powder
  • 1 teaspoon Salt
  • 1  Egg
  • 1  Egg Yolk
  • 3 Tablespoons Milk
  • 2 teaspoons Vanilla
  • 10 ounces, weight Chocolate Chips

Preparation

In the large bowl of your stand mixer, cream the butter and sugars with the paddle attachment on medium speed for 1-2 minutes.

In a medium sized bowl, whisk together flour, cornstarch, gum, baking soda, cocoa, and salt.

Add the egg, egg yolk, milk and vanilla to the mixture in the mixing bowl. Mix until combined. Gradually add flour mixture.

Add the chocolate chips. Chill in the refrigerator for one hour.

Preheat oven to 375 F. Cover the baking sheet with wax paper and spoon 8 cookies onto the sheet. Bake 11-13 minutes. Let cookies cool on the baking sheet for a few minutes before moving them to a cooling rack.

I am a big fan of soft cookies and chocolate chips. I enjoy Udi’s GF Chocolate Chips cookies. Yours look really delicious and tempting. I should give this a try too. Thanks for the recipe.
