Description

You will not be able to tell that it is gluten free! The only thing that I found is that if you use butter, it will be dryer……that is why I use oil. Try it – it is super moist!

Ingredients

  • 1 cup White Rice Flour
  • ⅓ cups Brown Rice Flour
  • ⅔ cups Starch Combo (I Use Potato And Corn)
  • 1 teaspoon Baking Soda
  • ½ teaspoons Xanthan Gum
  • ¼ teaspoons Salt
  • 3 whole Ripe Bananas
  • 1 cup White Sugar
  • ½ cups Canola Oil
  • 1 teaspoon Vanilla Extract
  • 2 whole Eggs
  • ½ cups Chopped Nuts Of Your Choice
  • 1 teaspoon Cinnamon

Preparation

Mix first 6 (the dry) ingredients together in a mixing bowl. Mix bananas, sugar, oil, vanilla, and eggs in another mixing bowl. Add dry ingredients to the wet ingredients and then stir in the nuts and cinnamon.

Bake in a buttered 9 X 5 loaf pan at 350 degrees F for 1 hour.

I’ll be trying this! I have been using the Banana Bread recipe on the back of Bob’s Red Mill GF All-Purpose Flour and although it’s tasty, it’s slightly “beany” because that mix is Garbanzo based. Congrats on being G-Free for a month!!
