Description

This is a simple but tasty gluten and dairy free taco soup recipe.

Ingredients

  • 2 Tablespoons Olive Oil
  • 1 pound Ground Beef Or Turkey
  • 1 whole Onion
  • ½ whole Green Bell Pepper
  • 1 clove Garlic, Minced
  • ¾ teaspoons Salt
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • ½ teaspoons Oregano
  • ¼ teaspoons Sugar
  • 1 cup Water
  • 2 cups Frozen Corn
  • 4 ounces, weight Chopped Green Chilies
  • 1 can (15 Oz. Size) Pinto Or Kidney Beans
  • 2 cans (14 Oz. Size) Diced Tomatoes

Preparation

1. Chop up the onion and green bell pepper.

2. Heat about 2 Tablespoons of olive oil over medium high heat. Brown the beef, onion, and bell pepper until meat is browned and veggies are softened. Drain off fat.

3. Stir in the garlic, salt, cumin, paprika, oregano, sugar, and water. Taste and adjust seasonings to your liking. Bring to a boil.

4. Add in remaining ingredients and bring to a boil

5. Reduce heat, cover and simmer at least 30 minutes. Viola! Dinner in a snap.
