Description

These are your basic flour-less peanut butter cookies, which makes them gluten free! You should make sure your peanut butter is gluten-free because not all of them are certified GF. I used Skippy Natural Creamy Peanut Butter. They are crispy on the edges and a little chewy in the center. They have the “crackles” on top which every good peanut butter cookie should have.

Ingredients

  • 1 cup Creamy Peanut Butter
  • ¾ cups Granulated White Sugar
  • ½ teaspoons Baking Soda
  • ¼ teaspoons Salt
  • 1  Large Egg, Lightly Beaten
  • ½ cups Chopped Unsalted, Roasted Peanuts (optional)
  • Extra Sugar For Rolling

Preparation

Preheat oven to 350 degrees F. Line cookie sheets with parchment paper.

In a mixing bowl cream together peanut butter and 3/4 cup of sugar. Add baking soda and salt and stir until well combined. Add beaten egg and stir. Add chopped peanuts if using.

Using a medium cookie scoop, scoop dough into balls. Roll in white sugar if desired. Place dough balls on prepared cookie sheets and flatten slightly with fork tines in a cross hatch pattern (see photo).

Bake in the preheated oven for 12-15 minutes, until golden brown. Let cool for a few minutes on cookie sheets before transferring to cooling rack to cool completely. Store cookies in an airtight container for up to 1 week.

{Julia’s notes: I didn’t line the cookie sheets with parchment paper since I didn’t have any on hand. I just lightly sprayed the pans with oil. I didn’t use the chopped peanuts. Why use creamy peanut butter and then add chunky peanuts? I like my PB cookies “chunk free.” I used The Pampered Chef medium cookie scoop and it made 16 cookies with no extra batter. Mine were perfectly baked in 12 minutes.}

By the way, my husband, who can freely eat gluten, has declared that he no longer wants peanut butter cookies made with flour. These are too good.

These were fine. Made because needed a GF dessert and they turned out edible, but far from the best cookies I’ve made.

I just made these for my teenagers. They were a hit. I added chocolate chips to a few of them. I will be passing this recipe on to my friends, especially those gluten free.

I made these for a group since one of the people needed gluten free. They are amazing. They have such an intense peanut butter flavor and smell. Everyone who tried one couldn’t believe how good they are. I loved how quickly they came together and how simple the ingredients are. This iis my new go to peanut butter cookie recipe.

I hosted a luncheon after church with some of our closets friends. I made a batch of choc chip cookies and then a batch of these for my gluten intolerant friend. EVERYONE loved! Also, my friend said they were the prettiest gluten free cookie she has ever seen! Thank you!
