This dairy free (and super easy) Coconut Chocolate Chip Ice Cream is low in sugar, high in protein and makes the perfect refreshment for a hot summer day.
Place coconut milk, eggs, coconut sugar, vanilla, and salt in a Vitamix. Blend thoroughly until smooth and well combined.
Briefly blend in chocolate chips, so that they are smaller pieces. Process according to the directions of your ice cream maker.
Serve (garnish with unsweetened shredded coconut if desired).

Is it okay to have raw eggs in this? What would happen if you left them out? Sounds delicious!
