Description

These gluten free Chocolate Almond Joy Bars were inspired by Carrie of GingerLemonGirl.com who wrote a recipe for Almond Joy Impossible Pie. Who doesn’t like the combination of chocolate, almonds and coconut in the form of a high protein, gluten free treat?

Ingredients

  • 4 whole Eggs
  • ¾ cups Coconut Milk (canned)
  • 2 teaspoons Almond Extract
  • ¾ cups Palm Sugar
  • ½ cups Blanched Almond Flour
  • ½ cups Coconut Flour
  • ¼ teaspoons Celtic Sea Salt
  • ½ teaspoons Baking Soda
  • ¾ cups Dark Chocolate Chips, Divided
  • ¼ cups Unsweetened Shredded Coconut

Preparation

In a large bowl, whisk together eggs, coconut milk, almond extract and palm sugar.

In a smaller bowl, combine almond flour, coconut flour, salt and baking soda.

Mix dry ingredients into wet with a handheld mixer. Stir in ½ cup of the chocolate chips.

Grease an 8×8 inch baking dish. Pour batter into the dish, then sprinkle shredded coconut and remaining chocolate chips on top.

Bake at 350°F for 30 minutes. Cool for 1 hour. Serve.

This was my first attempt at gluten free baking in 20 years. I was stunned!! These bars are delicious. I will probably use less almond extract next time but I was amazed at how “normal” these were. My children loved them too.
