Description

Adding ricotta to a spinach quiche gives it a rich and creamy texture. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free.

Ingredients

  • 10 ounces, weight Frozen Chopped Spinach, Thawed And Well-drained
  • 4 ounces, weight Baby Bella Mushrooms, Sliced Or Chopped [See Note]
  • 1 Tablespoon Butter
  • ¼ cups Yellow Onion, Chopped
  • 1 teaspoon Garlic, Chopped
  • 6  Large Eggs
  • ½ cups Heavy Whipping Cream
  • ½ cups Water
  • ½ cups Lucerne Whole Milk Ricotta Cheese
  • ½ cups Freshly Grated Parmesan Cheese, Divided
  • ¼ teaspoons Salt
  • ¼ teaspoons Black Pepper

Preparation

Preheat oven to 350ºF. Generously grease an 8×8-inch glass baking pan or a 9-inch round pie pan and set aside.

If frozen spinach is not already thawed, thaw it in the microwave. Empty the box into a sieve or strainer and force out as much water as you possibly can.

If you are using frozen sliced mushrooms, thaw them in the microwave and drain as much as possible. If using fresh mushrooms, slice or chop caps and stems.

Melt butter in a medium size skillet. Add onions and sliced mushrooms. Cook until onions are caramelizing and mushrooms are browning on each side. Stir often. Once mushrooms have browned, mix thawed, drained spinach in the skillet with mushrooms and onions. Spread spinach mixture evenly on the bottom of the baking dish.

In an 8-cup measuring cup (or medium mixing bowl), whisk eggs until smooth and creamy. Add cream, water, ricotta, half of the Parmesan, salt and pepper and whisk until blended. Pour egg mixture slowly over spinach mixture. Sprinkle remaining Parmesan cheese on top.

Bake 50 minutes, or until top is turning light golden brown and quiche is well set. Remove from oven and place on cooling rack. Allow to cool for 10 minutes before cutting. Quiche will deflate as it cools.

Note: If you like mushrooms, go ahead and double the mushrooms in this recipe. It will only add 1 net carb per serving.
