Description

An honest-to-goodness sausage gravy made low carb. This is not a cream sauce that you cook forever to thicken. This is a real gravy! Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, grain free, sugar free, low potassium, low sodium, nut free (depending on milk substitute), CKD, Renal Diet.

Ingredients

  • 4 ounces, weight Jimmy Dean Sage Sausage
  • 1 Tablespoon Lifesource Oat Fiber (See Notes)
  • 7-⅝ ounces, fluid Nestlē Media Crema (Unsweetened Condensed Milk), See Notes
  • ½ cups Unsweetened Dream Blends Coconut Almond Chia Drink, Or Other Milk Substitute
  • ¼ teaspoons Onion Powder
  • ¼ teaspoons Garlic Powder
  • Salt And Pepper, to taste
  • 1 Tablespoon Butter
  • 1 dash Psyllium Husk Powder (optional, Only If Needed To Thicken)

Preparation

Brown sausage in medium skillet, breaking up into small bits as you go. Browning the sausage adds a lot of flavor. When sausage is done, sprinkle oat fiber over the meat and stir so oat fiber absorbs any grease in the pan.

Add media crema and milk substitute, reducing heat to medium low. Stir well. Add seasonings and give it a taste. Adjust seasoning as desired. Add butter and stir in until incorporated.

The gravy will thicken pretty quickly as you continue to cook, and will thicken further when it cools. If you think it is still too thin, sprinkle a very small amount of psyllium husk powder (start with 1/8 teaspoon) over the top and cook a little more.

Yields about 2 cups of gravy, or 4 servings of about 1/2 cup each.

Notes:
• As a serving suggestion, serve over Aunt Rocky’s Almond Flour Biscuits (see separate recipe on Tasty Kitchen), sausage patties, or your favorite low carb biscuits.
• For a darker and more flavorful gravy, add 1/2 teaspoon Worcestershire Sauce or Kitchen Bouquet.
• I do not have a recommended substitute for the oat fiber. It gives the gravy the mouthfeel close to that of a flour gravy, and serves as the thickener. Oat fiber is made from the hull of the oat plant, not the grain. It is 100% fiber. For that reason most ketoers find it acceptable. I use Lifesource Oat Fiber 500 to assure a product free from gluten cross contamination. If gluten is not an issue for you, use whatever brand is cheapest.
• Nestlē Media Crema is a full fat unsweetened condense milk available in supermarkets that serve the Hispanic population, usually on the shelves with regular condensed milk in the baking section. It may also be ordered on Amazon, and should be available on Netrition by the end of April 2018. Do not confuse this product with Mexican “Table Cream” found in the refrigerated section. That is a sour cream substitute. I do not have a recommended substitute for the Nestlē Media Crema. That’s what makes this gravy so rich, thick, and creamy.
