Description

Next time you’re craving Mexican food, skip take out and make these quick and easy low-carb burrito bowls right at home! Guaranteed to be fresher, healthier, and way tastier! Plus, they’re ready in under 30 minutes and can be 100% customizable to your tastebuds!

Ingredients

  • 1 Tablespoon Olive Oil
  • ½ cups Diced Red Onion
  • 455 grams Ground Beef
  • 1-½ Tablespoon Burrito Spice Mix
  • 6 cups Romaine Lettuce, Washed
  • 1 cup Sweet Bell Pepper
  • ½ cups Chopped Green Onion
  • 1 cup Canned Black Beans, Drained And Rinsed
  • 1 cup Shredded Cheese Of Choice (I Recommend Cheddar And Monterey Jack)
  • ½ cups Full Fat Cream Cheese
  • 2 whole Avocados, Pitted And Sliced
  • 2 whole Limes
  • Salsa, For Topping

Preparation

Heat a nonstick pan over medium-high heat. Add olive oil and diced onion. Sauté until onions are slightly translucent. Add ground beef and burrito spice mix, breaking up into small pieces. Cook until beef is browned and no pink remains, about 10 minutes.

Divide Romaine lettuce evenly between bowls as the base of the burrito bowls. Divide cooked ground beef evenly between the bowls. Continue to build burrito bowls by evenly dividing your toppings of choice: sweet peppers, green onions, black beans, shredded cheese, sour cream and avocado.

Squeeze some fresh lime over the bowls, garnish with fresh cilantro, and top with a dollop of salsa!
