Super delicious cold weather soup.
Brown the ground beef and chopped onion together in a Dutch oven. Toss in the taco seasoning and ranch dressing mix and stir well. Add undrained petite diced tomatoes, undrained Rotel tomatoes, beans (drained) and water.
Cover and simmer for 20 to 30 minutes. This keeps very well in the refrigerator. Just like lasagna, it’s always better the second day.
Serve with sliced avocado, sour cream and lots of shredded cheese. Goes great with tortilla chips, Fritos, or cornbread.
