Description

Like Paula Deen’s White Bean Chili plus heat, minus half the ingredients. Not for the faint of heart!

Ingredients

  • 2 Tablespoons Canola Oil
  • 2 whole Green Bell Peppers, Seeded And Diced
  • 1 whole Serrano Pepper (seeds And All), Diced
  • 2 cloves Garlic, Chopped
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Oregano
  • ½ teaspoons Salt
  • 4 cups Chicken Broth
  • ½ whole Cooked Chicken (thigh And Leg Meat), Deboned And Skin Removed, Diced
  • 1 can (15 Oz. Can) Great Northern Beans, Drained
  • ½ bunches Cilantro, Coarsely Chopped

Preparation

Heat oil in a pot over medium heat. Add the peppers, garlic, cumin, oregano, and salt; stir well and saute for 3-5 minutes. Add remaining ingredients, cover and reduce heat to medium-low. Simmer until soup is bubbly, about 15 minutes.
