Nothing beats a hearty chili when the weather turns cold, and this recipe fits the bill perfectly! Swap the ground beef for low-in-fat ground turkey and swap kidney beans for great northern white beans. Add in some peppers, chilies and other veggies, and you have the perfect white chili! Don’t let the ingredient list scare you. It’s really very simple… Enjoy!
Heat olive oil in a large pot over medium heat. Add the turkey and brown it for about 5 minutes. Add onion, celery, yellow pepper, jalapeno, garlic and green chilies. Cook for another 5 minutes or until veggies are tender and meat is cooked through.
Add all of the spices. Stir and cook for another 1-2 minutes. Add the beans (reserving 1/2 of a can to mash later), broth and corn, and bring to a boil. Cover the pot, reduce heat and simmer for 20 minutes.
Use a fork to mash the reserved beans into a paste. Add the bean paste into the chili. Simmer the chili uncovered for another 20 minutes or until chili is thick. Make sure to stir frequently.
Add salt and pepper to taste. Make sure to use lots of fresh ground black pepper!
Stir in the cheese right before serving.
Note: For an even thicker chili, simply mash more of the beans prior to adding them. Get your chili on!
