Description

This watermelon peach gazpacho is summer in a bowl! It is the most refreshing, flavorful way to start a meal.

Ingredients

  • ¼ whole Watermelon, Seeded, Scooped Off The Rind And Roughly Chopped
  • 2 whole Peaches, Pitted And Roughly Chopped
  • 1 whole Shallot, Peeled And Roughly Chopped
  • 6 whole Basil Leaves
  • 2 pinches Salt
  • ½ teaspoons Sriracha
  • ½ teaspoons Strawberry Balsamic Vinegar
  • ¼ teaspoons Worcestershire Sauce
  • Additional Basil Leaves, Cut Into Chiffonade As Needed For Garnish
  • Additional Thin Watermelon Wedges, As Needed For Garnish

Preparation

1. Set up your food processor. In its bowl, combine watermelon, peaches, shallot, basil, salt, Sriracha, strawberry balsamic, and Worcestershire, sauce. Puree until it is uniform but still has some texture. Taste for salt and heat and add as necessary to your liking.
2. Transfer the watermelon peach gazpacho to a container and seal. Chill in the refrigerator for at least 2 hours.
3. Spoon the gazpacho into pretty bowls (or even martini glasses!) after it has been chilled, then garnish with basil and a thin watermelon wedge. So pretty and refreshing to start a meal! Depending on how big your servings are, this can feed about 4-6 people.
