A hearty, delicious stew that’s great in the winter time. A few simple ingredients thrown in the crock pot, and you have the best stew you’ll ever taste.
Chop all veggies until diced to stew-sized bites. You can add more or less of any veggies, depending on what you like.
Throw all veggies and stew meat into a crock pot. Cover with tomato soup and 1/2 can water (use the tomato soup can to measure). Sprinkle with the sugar, tapioca, salt and pepper (which can also be adjusted to taste).
Cook on high for several hours, until stew meat is cooked through. Enjoy!

I was so happy with this recipe! Will make it again and again! I omitted the tapioca and the thickness was perfect for us. Only other change was that I added some minced garlic. We absolutely loved the taste of this stew. The tomato soup mixes with the juices from all the ingredients to make a really declious base. I’ve struggled other times to make a stew with that perfect gravy base…not anymore! Super simple, quick and delicious! Thanks for posting it!

I’m glad you liked it! The tapioca just thickens everything up, so I recommend it, but I’m glad you could make it without and still enjoy! Thanks!
