Mixed bean soup combined with some vegetables is a perfect, healthy and simple veggie bean soup and one-bowl meal. I’m always looking for healthier one-pot meals, and this homemade soup is a great fit.
Place onion, garlic, and celery in a large pan. Add chopped tomatoes and stir. Add vegetable stock, salt and pepper. Bring vegetable mixture to a boil, cover, and simmer for 15 minutes.
When tomatoes are perfectly cooked, add mixed beans, peas, carrots, and green peppers. Continue to cook, uncovered, for an additional 5 minutes.
Adjust seasoning with salt and pepper. Add red chili powder. Heat through, stirring occasionally, for an additional 2–3 minutes, but do not let the mixture boil again. Turn off heat and add ketchup.
Garnish with fresh cilantro and fresh cream. Serve.
