Description

This quick and easy recipe for healthy Vegetable Beef Soup is perfect for a slow cooker and a cold winter night. Full of lean ground beef, veggies, and pasta.

Ingredients

  • 46 ounces, fluid V-8 Original Juice
  • 1 can (14 1/2 Oz. Size) Low-sodium Beef Broth
  • 1 pound Ground Beef, Browned And Drained
  • 1 bag (12 Oz. Size) Frozen Mixed Vegetables (Carrots, Corn, Green Beans, Peas)
  • ½ teaspoons Pepper
  • ½ teaspoons Seasoned Salt
  • ½ teaspoons Garlic Powder
  • ½ teaspoons Onion Powder
  • ½ cups Ditalini Pasta

Preparation

In a large stockpot over medium heat, combine V-8 juice and beef broth. Bring to a simmer and add ground beef, frozen vegetables, and season to taste.

Stir and cook for 5 minutes before adding the pasta. Cook pasta according to package directions, or until al dente.
