This is my go-to soup when I bring a dish to a sick friend or family member. It is well loved.
In a Dutch oven, sauté the onion, carrot and celery in butter until tender. Add remaining ingredients, bring to a boil. Reduce heat and simmer for 40 minutes.
I serve this with a yummy crusty bread. So good!
