Three cheese, tri-colored tortellinis, zucchini, and yellow squash come together in an incredibly flavorful tomato based broth all for 125 calories a serving!
In a large soup pot, bring broth, crushed tomatoes, seasonings, and onion to a slow boil, stirring frequently. Add sliced squash and simmer until tender, stirring frequently.
Add tortellini and simmer until the pasta is cooked to your preference.
Ladle yourself out a huge bowl and enjoy! This would be awesome served with a slice of crusty bread, or maybe garlic Parmesan bread. Hmmm, yummy, time for more soup!
Makes 9 cups, each cup with only 125 calories.
