Description

This soup is a definite crowd pleaser. Well, at least in my house it is! My husband requests this soup on a very frequent basis and I wouldn’t be surprised if he asked for some on a hot summer day (and I’m not gonna lie I would probably make it on a hot summer day cause it’s that good!)

Ingredients

  • 1 pound Hot Sausage
  • 1 whole Onion, Diced
  • 3 cloves Garlic, Minced
  • 5 cups Beef Broth
  • 1 cup Water
  • 1 teaspoon Dried Basil
  • 1 teaspoon Dried Oregano
  • 2 cans (14 Oz. Size) Diced Tomatoes
  • 1 can Tomato Sauce, 8 Ounce Can
  • 1 whole Bell Pepper, Diced
  • 1 whole Zucchini, Sliced Into 4ths
  • 3 cups Tortellini (Frozen)
  • Salt And Pepper, to taste

Preparation

Brown sausage in a pan over medium heat until well browned on all sides. Remove meat and set it aside, and drain any excess fat from the pan.

Saute onion and garlic for a few minutes in the same pan you cooked the sausage in. Cook until the onion is translucent.

Into a large stock pot, add the garlic, onion, meat, broth, water, basil, oregano, tomato sauce, diced tomatoes, green pepper, and zucchini and over medium high heat, bring to a boil. Then turn the heat down to low and simmer for 25-30 minutes. Lastly, add the tortellini and let simmer for another 15-20 more minutes. Salt and pepper to taste. Serve with bread for dipping.

This has to be one of the best soup recipes I have gotten off of Tasty Kitchen!!! My family loved it!!! Doubled the recipe and so glad I did, tasted even better the second day!!! Thanks for sharing this great recipe!!!
