A healthy, nourishing and cozy soup! The perfect antidote to the cold.
Coat the bottom of a large soup pot with the olive oil. Sauté fennel and shallot for approximately 10 minutes or until soft and translucent. Add minced garlic and saute 2 minutes more.
Remove sausage from casing and add meat into the pot. Cook for about 7 minutes or until browned. Use a wooden spoon to break sausage into small pieces as it cooks.
Add vegetable broth, stir to mix, and let it simmer for about 30 minutes. Add beans, tortellini and spinach and let simmer for 5 minutes.
Serve hot with freshly grated Parmesan cheese and fresh cracked pepper on top. Enjoy!
