Tomato soup warms the soul!
Peel the carrots, garlic, ginger and onion and cut into small pieces. You don’t have to cut up the tomatoes, just put them in as they are. Nice and easy!
Place all the vegetables into a saucepan and add the vegetable stock (it will not cover completely). Bring to a boil then boil for half an hour or until carrots are tender.
Then add chipotle, whipping cream and salt and blend thoroughly with a hand blender.
Serve the soup with pesto and a good piece of home baked bread. You could also add cooked pasta (elbows) or Goldfish (the snack crackers) into the bowls of soup. My kids loves that! Enjoy!
