A delicious soup with tomatoes and lentils.
Heat oil in Dutch oven over medium heat. Saute carrots and onions for 5 minutes. Add parsley and rosemary, then add remaining ingredients.
Bring to a boil. Lower heat, cover, and simmer until lentils are tender, about 1 1/2 to 2 hours.
