Tomato Gorgonzola Soup. A creamy version of tomato soup. I love to serve this with grilled cheese sandwiches.
Saute onion, garlic, basil and olive oil for five minutes. Add tomatoes and gorgonzola. Salt and pepper to taste. Simmer for thirty minutes. Blend all ingredients in a blender or food processor. Place back in the pot. Add white wine. Simmer for 15 to 20 minutes. Salt and pepper to taste.
