Description

A healthy, quick, easy and hearty chili that is made with three types of beans.

Ingredients

  • 1 Tablespoon Olive Oil
  • ½ cups Onion, Diced Small
  • 1 whole Large Green Bell Pepper, Seeded, Diced
  • 2 cloves Garlic, Minced
  • 1 can 28oz Size Tomato Sauce
  • 1 can 15oz Size Diced Tomatoes
  • 1 can 15oz Size, Red Kidney Beans, Drained Rinsed
  • 1 can 15 Oz Size Black Beans, Drained, Rinsed
  • 1 can 15 Oz Size White Kidney Beans, Drained, Rinsed
  • ½ teaspoons Sugar
  • 2 Tablespoons Chili Powder
  • ¾ Tablespoons Cumin
  • ½ teaspoons Salt
  • ½ teaspoons Black Pepper

Preparation

In a large pot, add olive oil, onions, bell pepper and garlic. Cook over medium-low heat until tender, about 5 minutes.

Add the tomato sauce, diced tomatoes, red kidney beans, black beans and white kidney beans; mix until incorporated. Stir in remaining ingredients. Bring to a boil, then simmer for 30 minutes, stirring occasionally.

Serve with cheese, chopped scallions or a dollop of Greek yogurt.

Loved this recipe. Very hearty as is but we’ve also added more vegetables and a little hot sauce. Perfect for those dreary days when you want to whip up chili quickly.
