Fresh, simple ingredients come together in one big pot to make this Texas version of Cajun Gumbo. All served over hot, white buttered rice. Grab a bowl y’all!
Heat a large pot, Dutch oven if possible, over medium heat. Fry bacon until almost done. Add onion and saute until soft and fragrant, about 10 minutes
Add water, garlic powder, chili powder, potatoes, and salt. Bring to a boil. And add tomatoes. Boil until potatoes are cooked through and tender.
Reduce heat to simmer and add okra. Simmer until okra is tender, about 15 minutes.
Serve over hot, buttered rice.
