This is our go-to winter meal. It’s so warm and filling! It works well in the crockpot too.
Fry ground beef (or turkey) and onion in a large pot until cooked through.
Add taco seasoning and ranch dressing mix, following the instructions on the taco seasoning package.
To the meat mixture, add corn, green chiles, rinsed beans and tomatoes.
Add water, one cup at a time, to reach your desired consistency. We like our taco soup to be relatively thick like chili, so we don’t add much water.
Bring ingredients to a boil and then reduce heat to low and allow to simmer for at least 20 minutes. (I make this a couple of hours ahead of time and let it simmer as long as possible. The smell is to die for!)
Top individual bowls with whatever you’d like… green onions, cheese, corn chips, sour cream…

Christina, this is an excellent recipe just the way it is, but the many times I made it, I fine tuned it with veggies that I love. I did use yours for a base though. I used 2 lbs. of beef, 1 can of yellow corn and 1 can of white corn, can of lima beans, a can of great northern beans (instead of pinto, kidney and black), and a can of rotel. So tasty.

This was excellent. Unfortunately, I grabbed the can of jalepenos instead of the can of green chili’s. OOOpppss! It was a little hotter than it probably should have been, but still very tasty! Thanks…

I made this for dinner and my DH and I both loved it! I put all the ingredients in my slow cooker and let it cook ALL day on low. Thanks for sharing the recipe!

This was very easy to make. I liked it, but my husband wasn’t a huge fan. Then again, he doesn’t like soup much.
Good, basic taco soup recipe though.
