This is garlic soup the way my mama makes it—not the French style I am sure, but it is ohh so good! You can serve it as is or with gratined bread toast on top. Yummy!
Peel all the cloves from the garlic head, and smash them a bit. There must still be big chunks of garlic.
In a deep pot, melt the butter with a few drops of olive oil to prevent the butter from burning; sauté the garlic until golden brown. BE VERY CAREFULL NOT TO BURN THEM! Then add half of the water and the bouillon; let it boil for a while, until the garlic is very tender.
In the blender, liquefy the cilantro, bread and the garlic with the liquid. Pour it back into the same pot. Add the rest of the water, let it boil for 5 minutes. Add salt, pepper and cumin to taste. You can also add a bit more of chicken bouillon. Mix well, and it is ready to serve.
