Description

A quick and easy soup that makes use of common pantry ingredients.

Ingredients

  • 1 pound Ground Extra-lean Hamburger Or Venison
  • 1 whole Chopped Sweet Onion
  • 14 ounces, fluid Canned Corn, Drained
  • 14 ounces, fluid Canned Stewed Tomatoes
  • 28 ounces, fluid Canned Crushed Tomatoes
  • 14 ounces, fluid Canned Kidney Beans, Drained
  • 2 cups Chicken Broth
  • 1 envelope Taco Seasoning
  • Grated Cheese, For Topping
  • Crushed Corn Tortilla Chips, For Topping
  • Sour Cream, For Topping

Preparation

Brown the ground meat and onions in a dutch oven until browned. Add the corn, stewed tomatoes, crushed tomatoes, kidney beans, chicken broth and taco seasoning. Cook over medium high heat until it comes to a boil, then reduce and simmer for about 30 minutes.

Serve in bowls with grated cheese, crushed corn tortilla chips and sour cream as optional toppings.
