A warm meal for a cold winter day, made with vegetables for a healthy choice.
1. Melt butter in a large saucepan over medium heat. Then add the coriander and green onions and cook 2 minutes. Make sure you stir to prevent scorching.
2. Add broth, carrots, sweet potato, hot sauce and black pepper. Bring to a boil, then lower heat to a simmer and simmer for 20 minutes, stirring occasionally.
3. Remove pot from heat and use a handheld blender to puree until smooth. Then return pot to heat for an additional two minutes.
4. Drizzle a little whipping cream on top of each bowl of soup if you like.
5. Enjoy!
