I don’t like blended soups, but decided to try my hand at a chunky version of sweet potato soup. This blew me away! It’s slightly sweet from the potatoes, with basil shining through. Plus, only FOUR ingredients!
Peel and chop sweet potato in 1/4-inch chunks.
Bring broth to a boil, add sweet potatoes and boil for 10 minutes.
Add seasonings and simmer five minutes. While simmering, smash some potatoes on the side of the pot to thicken the soup.
Salt and pepper to taste.
Serve with croutons or a dollop of sour cream (or both!).
