Potato soup that really wants to be a baked potato.
Prepare and place potatoes in the microwave; bake. Saute onions in butter till tender. Add flour, cook for 2-3 minutes. Add broth and milk, bring to a simmer. When potatoes are done, scoop the flesh from two skins, mash with a fork and add to the soup. Dice remaining two potatoes with skins and add to the soup. Heat through.
Top with your favorite baked potato toppings: sour cream, cheddar cheese, chopped bacon, chopped scallions, etc.
