Mmm. Warm and creamy, a little like pumpkin pie in a bowl. I roast squash from the garden, mash it up, and freeze 3-cup portions in zip top bags. Sprinkle roasted pepitas (pumpkin seeds) on top if you like.
Combine all ingredients in a 3-quart saucepan. Bring to a boil and simmer 15 minutes.
