French onion soup with a spicy kick!
1. Peel, then slice onions into thin strips.
2. Chop garlic until finely minced.
3. Heat oil and butter in a medium sized pan over medium heat. Once they are hot add onions and garlic.
4. Cook onions and garlic until onions just start to brown.
5. Add beef broth, lemon juice and salt and pepper.
6. Bring to a boil, then reduce heat and continue to cook for 20 minutes or until onions are cooked through.
7. Ladle soup into four oven-safe soup mugs.
8. Top with croutons followed by pepper jack cheese and put the mugs under the broiler until cheese is bubbly and starting to brown.
