Soupy Rice is called Pao Fan in Chinese. It is a one-pot meal with leftover cooked rice (white or brown), whatever vegetables you have, and meat (chicken, turkey or pork) or eggs. If you use meat, you can use fresh meat, or you can use leftover grilled or roasted chicken, or grilled pork chop. It is a very easy and quick dish!
Put a Dutch oven over medium heat. When Dutch oven is warm, add olive oil to cover the base.
Scramble the eggs. Throw in tomato, cucumber, edamame, and rice and stir well. Add a dash of salt, then the water. Cook for about 15 minutes.
Add the minced green onion. Remove soup from heat and enjoy your simple but delicious and healthy one-pot meal!
