This is a Cuban soup made with green plantains. It is simple to make, especially if you have any leftover beef broth from making Ropa Vieja.
1) Place the plaintains and garlic cloves in a pot. Cover with water and boil until the plantains are tender. Reserve the cooking water.
2) Mash the plantains and garlic cloves with a fork in a separate plate or bowl. Add between 1/4 cup and 1/2 cup of the reserved water to ensure the mixture does not dry out.
3) Heat up the beef broth over medium heat.
4) Add the mashed plantains and garlic. Salt to taste. I use less than a teaspoon of salt when using homemade broth. The soup will thicken slowly.
5) I like to serve this with Mariquitas (plantain chips).
