This spicy soup is perfect for a cool warm or winter day.
Heat the olive oil, onions and garlic in a large pot over medium heat. Saute 2-3 minutes. Add the potatoes and peppers and saute 5 minutes. Add the broth, salt and agave and bring soup to a boil. Drop heat to a simmer, and cook uncovered, for 20 minutes (or until potatoes are tender). Puree in batches in a blender or with an immersion blender. Enjoy!
