The key to the perfect miso soup is actually using dashi broth rather than water. Most dashi is made with a combination of kombu, bonito flakes, and water. Homemade dashi can be a laborious task so using dashi granules a great shortcut so you don’t have to spend tons of time boiling things.

Note: To make homemade dashi quickly, combine 1 ½ teaspoons of dashi granules with 3 cups of water.
Transfer dashi to a small soup pot over medium-low heat. Meanwhile, stir together hot water and miso until miso is dissolved. Pour watery miso mixture into the pot. Add cubed tofu. Bring the pot to a simmer.
To serve, sprinkle sliced green onions and a pinch of katsuobushi on top.
