A quick and easy red lentil soup recipe flavored with garlic, cilantro and lemon.
1. Rinse lentils in a colander, making sure to remove any sand or small stones.
2. In a large soup pot, boil lentils in the salted water, until tender.
3. In the meantime, in a large skillet, sauté cilantro and garlic in olive oil. Add to lentils.
4. Add lemon and salt to taste and let simmer for about 20 minutes.
5. Enjoy!

This soup is delicious!! It combines our favorite flavors, so I had high hopes and it did not disappoint. My 5 year old was hesitant to try it, but then begged for more while it was simmering. Thank you for a recipe I’ll make again and again!
