Farm fresh beets and daikon radishes combined with cool cucumber are the base for this wonderful and invigorating raw cold soup.
Wash the beets, cucumber and radish. Peel if not using organic. Quarter the beets and slice the radish and cucumber into 1-2 inch cubes. Add the vegetables and all remaining ingredients into a high-powered blender and blend until smooth (1-2 minutes).
This soup is wonderful alone, but even better with garnishes. I topped mine off with a dollop of cultured sour cream, spicy pickles and a pinch of smoked serrano sea salt to give it a little more heat.
