Description

Farm fresh beets and daikon radishes combined with cool cucumber are the base for this wonderful and invigorating raw cold soup.

Ingredients

  • 4 whole Beets
  • 1 whole Cucumber
  • 1 whole Daikon Radish
  • 5 Tablespoons Olive Oil
  • 4 Tablespoons Raw Apple Cider Vinegar
  • 1 cup Filtered Water
  • 3 cloves Garlic
  • 1  Thai Chili, Stem And Seeds Removed
  • 1 teaspoon Minced Fresh Ginger
  • 1 pinch Smoked Serrano Sea Salt Plus More For Garnish
  • Optional Garnishes, See Note

Preparation

Wash the beets, cucumber and radish. Peel if not using organic. Quarter the beets and slice the radish and cucumber into 1-2 inch cubes. Add the vegetables and all remaining ingredients into a high-powered blender and blend until smooth (1-2 minutes).

This soup is wonderful alone, but even better with garnishes. I topped mine off with a dollop of cultured sour cream, spicy pickles and a pinch of smoked serrano sea salt to give it a little more heat.
