This soup is one that has evolved from a diet magazine. The diet wasn’t great and neither was the soup, until I got my hands on it and kicked things up a notch. It is no longer “diet” but it is a great solution for a busy weeknight and includes the kind of ingredients that you can keep on hand for an emergency. I also believe it is better the second day, but then, most soups are.
Dump all of the ingredients (except cheese and black pepper) into a large soup pot and simmer over medium heat until the potatoes have softened and the soup is heated through.
Finish each bowl with a sprinkling of Parmesan cheese and fresh black pepper.
