A quick, easy soup that you can have on the table in half an hour.
In a stock pot, brown the ground beef over medium-high heat. Remove meat from the pot, add onion, and sauté until soft. Put the beef back to the pot and add the garlic, thyme, tomato juice (or sauce), broth, and salt. Cover and simmer for 10 minutes.
Add the vegetables and parsley. Cover and cook until heated through, about 5 minutes.
