Description

Smoky and savory pumpkin soup that is sure to warm you up this fall and winter.

Ingredients

  • 2 Tablespoons Butter
  • ½ bunches Leeks, Chopped
  • 1 stalk Celery, Chopped
  • 1 clove Garlic, Minced
  • ¼ cups Dry White Wine Or Sherri
  • 1 whole Large Potato Diced
  • 1 whole Carrot, Diced
  • 6 cups Low Sodium Chicken Broth/stock
  • 1 can (15 Oz. Size) Libby's Pure Pumpkin Puree
  • ¼ teaspoons Freshly-ground Nutmeg
  • 1 teaspoon Kosher Salt
  • ½ teaspoons Freshly Ground Pepper
  • ½ teaspoons Ground Cumin
  • Cayenne Pepper To Taste
  • 1 carton (6 Ounce) Plain Yogurt
  • ½ cups Heavy Cream

Preparation

In a large stockpot over medium heat, melt the butter. Add the leek and celery and saute for about five minutes. Stir in garlic, then white wine. Add the potatoes and carrots to the pan, then pour in the chicken broth. Let simmer about 30 minutes, until vegetables are tender.

Carefully pour liquid into a blender and puree. Don’t put the lid on too tightly as this could cause it to pop off because of steam pressure but do make sure that hot liquid will not splatter and burn you. Return mixture to pan. Stir in pumpkin, nutmeg, salt, pepper, cumin and cayenne. I probably used closer to a whole teaspoon of cumin but I recommend starting small and building up. The cumin really made this recipe for me. If mixture is too thick, add more chicken broth until it reaches the desired consistency. Heat over medium low heat until hot. Remove from heat. At this point, you can stop and serve it as it is. I tasted it and it’s wonderful, but I had something else in mind, so we’ll finish it as planned by stirring in the yogurt and cream. Serve hot with crusty bread.

I really liked this recipe, it had a lot of good vegetables in it and was nice and hearty. I tried it without the yogurt and the cream, and was very happy the flavor. Next time I will try it with the yogurt or the cream to compare. I did go with a full teaspoon of cumin, and found it to be just a bit much, though I would still go over a half, probably 3/4 of a teaspoon would be the sweet spot for me. The only issue I had with preparation was that I had more soup than blender space. Next time I will either reduce liquid by at least a cup or use an immersion blender. Thanks for this great recipe!!!
