Yummy soup and easy to make. I used frozen, pre-sliced leeks which sped up the process. I didn’t need all 3 quarts of stock, only 2. Also, we added about 1/2 cup of half and half just to give it a little creaminess. All in all, delicious. Will definitely make again! Thanks!

Delicious! I followed the recipe as is but I did peel the potatoes and I pureed the soup & added the half & half. Thanks so much for sharing. I’ll be making this again and again.

This was so delicious, used instant potato flakes to thicken it up just a bit more. We both love it! thanks for sharing

Thanks Deb, I am so glad you enjoyed it. Another way to thicken it up a bit is to put half of the soup mixture in the blender and puree it then add it back to the soup.

I made this tonite for dinner, it was awesome, I used instant potato flakes to thicken it up a bit more. We love it, thanks for sharing
