I can’t recall where I found this recipe but it’s a keeper! Super easy, deliciously good. Can be made even easier with purchased pre-shredded cabbage and pre-diced ham. If you like potatoes and cabbage, you’ll love this soup! You can also exchange stock for broth for a bit lighter flavor, less sodium versions, etc. I prefer the boldness of the stock.
1. Combine all ingredients except half-and-half in slow cooker.
2. Cover. Cook on high for 6 hours.
3. Remove 2 cups of the ‘solids’ and 1 cup of ‘liquid’ from the cooker and puree in blender. Return to cooker.
4. Stir in half-and-half and cook on low for 20 minutes more.
