Posole is a Mexican stew usually served on Christmas Eve or New Year’s Day. It is said to be a remedy for a hangover.
I don’t use exact measurements when I cook. I mostly eyeball it. But I’ve tried to give you some sort of measurements here. So you’ll probably have to play with this recipe and make it your own.
You will need a large stock pot (12 quarts or so).
Pour cooking oil into pot and heat, then add pork meat. Cook on medium-high heat until browned. Add onion and garlic and cook for another 3 to 4 minutes. Sprinkle flour over meat mixture and stir until browned.
Add water, red chile, posole, bouillon, cumin, oregano, salt and pepper and stir until combined.
Bring to a boil, then turn the heat down to a simmer and cook for 3 hours, stirring it every now and then.
Serve with these garnishes:
Lime or lemon wedges, squeezed into stew
Diced yellow onion
Oregano
Can be enjoyed with:
Bolillos (Mexican/French rolls)
Crackers
flour or corn tortillas

I’ve always used the recipe on the back of the frozen posole package…until today. This recipe was terrific – and so easy! Wondering why you rated it with an intermediate degree of difficulty? Anyway, adding the flour to the meat/onion/garlic mixture is a great idea. I’ll be making my posole this way from now on. Thanks!
