I learned this way of using leftover pancakes from my German step-grandmother. It’s very easy and tasty, and kids think it’s funny. Quantities are approximate. See my TastyKitchen recipe box for my Pancake recipe.
Heat broth to a boil.
Slice pancakes into thin strips. Place pancake strips into the bottom of a serving bowl. Pour broth over strips.
Enjoy!
Notes: I use a German recipe for an unraised pancake, but any pancake that isn’t very sweet will do. Pancakes may be frozen to make this soup later. I usually use Knorr bouillon cubes to make this. Vegetables or leftover meat, even shrimp, work well in Pfannkuchensuppe.

My German grandmother and mother makes this too! They always make the Pfannkuchen not too sweet in order to use the leftovers in this soup. I do the same and have found that Pfannkuchen from the day before work the best, since they keep their shape better in the hot soup after a night in the fridge. Love it! They taste like a mix of dumplings and eggnoodles.

My grandma used to make this too! Haven’t thought of it in years, but it was my favorite as a child. Now, if we would only ever have some leftover pancakes…
