A childhood favorite!
Bring broth to a boil in a soup pot. Stir in pastina and cover. Cook for 5 minutes over medium-high heat. Lower to medium and stir in spinach. Cook for 1 minute and remove from heat.
In a separate bowl, whisk eggs and cheese together. Slowly add egg and cheese mixture into the hot soup, stirring as you go. The heat will cook the egg.
