Bursting with flavour, colour and wholesome goodness, this soup is easy to make with all-natural ingredients.
Heat olive oil in a large saucepan and fry onion until it just starts to soften. Then add red pepper and stir-fry for about 3 minutes. Add carrots and sweet potato and fry for anoher 3 minutes.
Pour in vegetable broth and boiling water. Turn heat to medium high and allow soup to simmer for about 20 minutes, or until vegetables are very tender.
Take soup off heat and stir in paprika, salt and pepper. Allow soup to cool enough to blend safely. Once the soup is cool enough, blend until silky smooth.
Serve hot with chopped coriander and sesame seeds sprinkled on top.
