Delicious and creamy tomato soup!
Saute carrots, onions, and basil in olive oil for 15-20 minutes or until soft. Add tomatoes and broth, and then simmer for 25-30 minutes. Then, remove from heat and puree until smooth using a food processor or regular blender, or use an immersion blender if you have one. Return the puree to the pot, add cream or half and half and season to taste with salt, pepper, and I used a dash of red pepper flakes.
